Broseley Festival Set Menu 2018

June 16thand 17th2018

Seared Cornish mackerel fillet ; salt cod ‘bacalao’, shaved fennel and gazpacho sauce

Pea,lettuce and mint soup

A coarse terrine of rare breed ‘Middle White’ pork, wrapped in bacon, with parsley and prune

Cumberland sauce and toast

Soft boiled Arlington egg with pistachio dukkah, hummus with smoked paprika; roasted peppers

Poached sea trout with Jersey Royal potatoes; cucumber, dill and crème fraiche

Fish and chips – with deep fried Cornish hake fillet in beer batter with our chips and tartare sauce

Baked Goosenargh chicken stuffed with a herby cream cheese and mushroom stuffing ‘ under the skin’ with dry cured smoked bacon, Shropshire quinoa and peas; sherry vinegar sauce

Potato gnocchi with tomato, pesto and Puy lentil sauce; tender stem broccoli

Berries and jelly – summer fruits set in a moscato jelly with vanilla cream

Poached apricots with cherry ripple ice cream, pistachio and meringue

Warm honey,elderflower and almond polenta cake with raspberries and Greek yoghurt

Irish Cashel Blue and Charles Martell’s Single Gloucester with fruit and biscuits

Set menu at £25 per person
