Marinated fillet, cured in lime juice and green chilli; served in a 'cool' green broth with avocado

A clear broth with Madeira; with the addition of smoked chicken, carrots and little pasta shapes £8

A large ravioli-slow cooked veal shin made into a tasty pasta filling with chicken mousseline; served on saffron risotto £9
