New Year’s Eve Supper 2016

For this special evening we have a set menu…..

On arrival – Bellini glass of Prosecco with white peach nectar

and

Nibbles of Bella di Cerignola Olives -Anchovy and onion confit pastry slice -Smoked salmon

Bowl of Trudy’s bread

To start

Leek and smoked Newport 1665 cheese croquette;fig relish;apple ,celery and walnut salad

Festive spiced beef – Cured and spiced organic beef brisket; cooked slowly and pressed – sliced into shavings onto potato and horseradish salad with truffle crisps

Mousseline of chicken with mushroom duxelle topped with puff pastry;Madeira and morel sauce

Salmon gravlax with beetroot and orange;baby watercress; sweet mustard dill sauce

For maincourse

Monkfish – Saltimbocca of monk loin wrapped in Prosciutto ham and purple basil, pan fried and roasted in the oven. Tomato and pesto sauce; courgettes ‘persillade’; olive mash

Organic English Longhorn beef sirloin from Great Berwick , Shrewsbury.Sam and Clare’s beef is home reared and 100% pasture fed and organic; dry aged for 35 days…Sirloin steak,fully trimmed and cooked to your liking, and served with a red wine- Cassis shallot sauce.Served with a salad of Cashel Blue, grape and caramelised red onion  Little roast potatoes cooked in beef dripping with thyme and garlic

Local lamb fillets marinated with middle Eastern spices, seared and served with a ‘jewelled’  cous cous of roasted pumpkin, pomengranate, Madjool date , feta and medlar jelly

Farro with slow- roasted tomatoes, artichokes, olives and oregano with labneh*

For Pudding

Bread and butter pudding with rum soaked sultanas ; custard

Meringue with new season’s rhubarb; stem ginger ice cream

Tart tatin with vanilla cream

Chocolate marquise

Plate of cheese including Mr Moyden’s Wrekin Blue; Devon Sharpham with chive and garlic

Brie de Meaux ; Finn & Dorstone Cheese, taken as an ‘extra’ course, £9

The set meal tonight is £45 per person and

the set vegetarian option is £35 per person*
