Our first Supper evening in March 2015 was again
from this area but with a more ‘wintry feel’ but……
after a great little holiday to the region recently –
we want to conjure the tastes and smells of this
fabulous area for a summer evening.

Salade aux crudites, le Cayrolais Charcuterie et oeuf mollets
A colourful mix of vegetables with saucissons sec –Henri Manhes uses artisan techniques to naturally cure and gently age hand selected pork and soft boiled egg
Soupe de pistou aux crevettes
Similar to an Italian minestrone with ‘haricot blancs’ and Mediterranean prawns

Poulet braise Tarnaise
Braised chicken with pork and olive stuffing

Fromage Cows are relatively few to the region with goat and ewe able to withstand the soaring summer heat.
Roquefort Arbas – classic blue with unpasteurised ewes milk.
Couer a La Rose – a little fresh tasting soft goats cheese, again, made from unpasteurised milk
Compote d’abricots; glacé lavendre ; Financier
Apricot compote with lavender ice cream; almond cake

Lemon and orange blossom pastry fritters
