In so many ways Sicily is a microcosm of Italy.

It has volcanoes, mountains and beaches, together with ancient cities

containing a wealth of historical architecture. Its volcanic soils and

sub-tropical climate nurture an abundance of oranges, lemons,

almonds, olives and grapes, and the surrounding Mediterranean

is rich in seafood.

Calzone – mini baked brioche with ham and mozzarella

Stigghiola…pancetta,thyme,sausagemeat

Arancini al pesto trapanese

Gamberi…grilled prawn

Pasta con le sarde

Sardines with bucatini pasta and fennel

Spalla di maiale a cottura lenta

8 hour Slow cooked Middle White pork shoulder with rosemary,bay, lemon and garlic

served with

Caponata – fried aubergine and courgette in a ‘agrodolce’ sauce with raisins and pine nuts

Crocchè – Potato croquette

Blood orange sorbet

Torta Setteveli

A typical celebration cake from Palermo- cake of the ‘seven veils’ ; a combination of alternate layers of chocolate and hazelnut

Coffee and cannolo – sweetened crisp puff pastry filled with Sicilian pistachio spread-ricotta cream

Served with a small glass of Marsala Vergine Riserva – only produced in the best vintages, sees a long aging process that lasts almost 25 years.
